Welcome to A VEGAN’s CHRISTMAS🎄 this is essentially what you should make for Christmas that just so happens to be vegan. If you want to know what Christmas would be like if I was round your house, well this.

Today, you lot asked for my ROAST POTATO recipe. Now this has lasted me years and years, I make it every chance I can for Sunday roast, but I definitely think you should make them for Christmas. 🥔

Absolutely stunning, salty, and super crispy, it’ll be the present I get @poppy_cooks this year.

- 1.5kg of Maris piper potatoes
- A good lot (80ml) of light or extra virgin olive oil
- Handful (10g) of flakey salt
- 2 sprigs of rosemary (chopped before grinding)
- 2 sprigs of thyme
- 2 sage leaves (chopped before grinding)
- 3 litres of boiling water
- Good roasting tray and a colander

You ever looked at a crumpet and gone “god you’re a lil baddie wonder what would happen if I put some effort into you and made a dessert?” Well if you have, do this.

This is a game-changing crumpet.

Big thanks to @ixta.belfrage and her book MEZCLA which is where I got the inspiration. Her recipe is also done in an oven which is so worth doing also.

2 crumpets
3 tbsp agave syrup
1 and 1/2 tsp ground cinnamon
1 heaped tbsp vegan butter (or coconut oil)
2 peels of 1 orange

compote:
80g frozen cherries
2 tbsp agave syrup
Pinch of sea salt
25ml hot water

Top with
1 square dark chocolate
2 tbsp chocolate tahini (or go for almond or choc hazelnut butter)
1 tsp vegan cream cheese
Orange zest

120g Tenderstem broccoli
100ml white wine (vegan pls, not all wine is vegan)
200g risotto rice
2 tsp red miso paste
600ml boiling water
60g frozen peas
60g frozen edamame beans
50ml oat milk
Handful (15g) of fresh tarragon
Salt and pepper

All I wanted to say is thank you for the love and the support on the book, and all the hype you lot have been giving it. I’ve not physically met the majority of you so the fact that you’re able to pre-order the book off just me on an app alone speaks volumes to me. In the first day of it going live, we reached #1 in Hot New Releases on the Amazon Vegetarian and Vegan Cooking and #541 in All Books, and that’s bonkers to me considering you lot, and me, have to wait another 6 months for it.

Here’s also some moments of when I found out I was doing a cookbook and then me withholding the secret from you all.

This book has been a labour of love for me, and I can’t wait for you to read it and more importantly, see it, but also MAKE THE FOOD FROM IT.
