Ingredients

1 can black beans
2 red onions
1 red pepper
1 tbsp Olivia oil
2 garlic cloves
1 tbsp tomato paste
1 tsp chipotle paste (or more if you can hack your spice)
1 avocado
1 lime or lemon
1 pouch of microwave rice
Bit of coriander
let’s face it, trying a vegan diet for the first time is hard, just like everything when you start. your whole fridge changes overnight and you start to take notice of what you’re eating. It’s tough, and that’s where I come in. all of my recipes will take you 20 minutes or less to cook and prepare, with simple ingredients and no faff at all. so, do yourself a favour, and spend 20 minutes today making a protein-packed dish like this one, completely from plants. madness I know.

Instructions

1.Chop up the onions. Leave 1/2 the onion to the side, and fry the remaining onions with sliced peppers and Olivia oil.
2.Add in chopped garlic and black beans with the water. Let it bubble for 5 minutes then add in the Add in tomato paste & chipotle paste.
3.Mash up the avocado with the 1/2 of onion, and season with salt and lemon (or lime).
4.Microwave your rice according to the packet instructions.
5.Serve it all up with coriander and make sure you season it!
