1 baby shallot (or 1/2 banana shallot)
2 tbsp Olivia oil
2 tbsp apple cider vinegar
1 tsp salt
1/2 lemon
A small handful of basil
200g Tenderstem broccoli
100g frozen edamame
100g baby spinach
or another name for this, broccy balboa. this salad is simple in principal but just goes to show that simple ingredients can give you full flavour and make you think “oh snap that’s just oil and vinegar doing that immaculate taste thing? wow.


1.Steam your edamame and broccoli. Or cook it in a frying pan if you prefer.
2.Chop up your shallot, and add it into a bowl with the olive oil, lemon, apple cider vinegar and salt. Mix and leave to one side.
3.Drain the veg and chuck in a bowl with the spinach.
4.Add the dressing and toss the salad. And guess what? That's all you have to do.
