
125g self raising flour | |
30g vanilla protein powder | |
1 tsp baking powder | |
Pinch of salt | |
1 tsp of agave (in the batter) | |
2 ripe bananas | |
250ml plant milk | |
3 tbsp flaxseed | |
Coconut oil (for the pan) | |
50g blueberries | |
2 tbsp cold water | |
1 tbsp maple syrup | |
Zest and juice of 1/2 a lemon | |
20ml boiling water |
and they’re vegan, but you knew that already. this is an ode to the first ever pancake recipe I made. and it’s my favourite combination, sweet blueberries, fluffy american-style pancakes and more blueberries. yep, it deserves to be mentioned twice. honestly, if you are going to make a set of my pancakes, make sure you include this one.
1. | Blitz the bananas, milk and flaxseed in a blender until smooth |
2. | Mix the dry ingredients with the banana flax mixture, add the agave and let it sit for a few minutes. |
3. | Drop a little coconut oil into the pan and heat on a medium. Fry each pancake for about 2-3 mins each side. |
4. | Meanwhile in a small saucepan, add the blueberries, maple syrup, lemon zest and juice and the boiling water and bubble on a medium high heat until the liquid has reduced and the berries are sweet and juicy. You'll know when. |
5. | Serve up your stack as big as you want and top with the berries. Also go wild, the mixture serves a good 8-12 pancakes. |
