Ingredients

1 white onion
2 cans beans (I went with butter beans and cannellini beans)
1 tsp paprika
2 garlic cloves
1 tbsp maple syrup (or any vegan sweetener you want)
1 red chilli
1 tbsp apple cider vinegar
pinch of salt and pepper
1 tbsp soy sauce
1 tsp mixed herbs
1-2 slices of sourdough bread
I think everyone can say nothing beats beans on toast. especially if you’re hungover, you fancy a fry up or if you’re just craving a savoury breakfast. I always feel like I need to do more with dishes like these, so I’ve tweaked it ever so slightly to give it a kick, give an edge to the beans, a little bit of spice. Go try it. Go love it. And go wild at the fact that it’s vegan, and it was made fresh, homemade by your own hands. also, yes, you can leave the chilli out and it'll still be beautiful.

Instructions

1.Chop the onion, garlic and chilli and fry in olive oil until soft.
2.Add in the beans, the spices, season and then add the passata.
3.Add in the syrup, soy and apple cider vinegar
4.Toast your bread and once toasted, serve it all up. Pinch of chilli flakes on top if you fancy it.
