
1 courgette (or zucchini) | |
1 red pepper | |
1 can chickpeas | |
1 tbsp olive oil | |
Salt & pepper | |
200g couscous | |
1 tbsp rose harissa paste (or tomato paste) | |
a handful of pomegranate seeds | |
1 lemon |
It’s here. Everyone’s favourite side…couscous🔥 I love it, you’ll love it and this one’s actually £1.45 to make. Which is sick considering it costs less than a shop bought couscous. Mad. Go try it.
1. | Chop up the veggies and fry in olive oil till soft. |
2. | Soak 200g couscous in 250ml boiling water and half a lemon's juice. Use a heatproof bowl and cover the top of it to trap the steam in. After 5 minutes, you'll get fluffy couscous (side note: if you wanna increase/decrease the amount, always do 1:1.25 ratio for couscous to water). |
3. | Add the chickpeas to the frying pan then the harissa paste. Season to taste and fry until the chickpeas are toasted. |
4. | Mix 3/4 of the veggies in a large bowl with the couscous. Use the remaining 1/4 to put on the top. |
5. | Squeeze the rest of the lemon on top and chuck on the pomegranate seeds. Done. |
