1 block extra firm tofu
50g cornflour
1 red pepper
1 can (230g) pineapple chunks
4 tbsp soy sauce
2 tbsp apple cider vinegar
2 tbsp tomato paste
2cm ginger
20g fresh coriander
sesame seeds
did somebody order a chinese? an unreal classic and one I call a “fan-favourite”! sweet and sour tofu, that reminds you of the classic takeaway dish but blossoms in unreal flavour.


1.Drain the tofu using some kitchen roll and chop into chunks.
2.Coat the tofu in cornflour and season with salt and pepper. All the pieces should then be coated and you can then fry them in oil for 3 mins each side. Remove the tofu from the wok once all the pieces are evenly crispy.
3.Chop the pepper and pineapple into chunks, and peel and chop the ginger into small pieces.
4.Stick the wok back on and fry the veg until softened. Add all the sauce ingredients and reduce until thick. Chuck the tofu back in and coat everything in the sauce evenly.
5.Chop the coriander finely. That's your garnish.
6.Finally, serve up, finish the tofu with coriander, sesame seeds and a extra season of salt and pepper. Go eat.
