
40ml (espresso) of quality coffee | |
whole packet of digestive biscuits (ensure they are vegan before purchasing) | |
1 block silken tofu | |
1 can (70ml) coconut cream | |
1 tsp vanilla extract | |
pinch of sea salt | |
2 tbsp cocoa powder |
oh look, it’s a tiramisu. of course it is, I can tell. prepare to be blown away with this vegan rendition of a classic, tiramusic to your ears.
1. | Brew the espresso and once ready, pour into a small bowl. Let it cool down, then lightly soak each digestive in the coffee, then leave the digestives on a large plate. |
2. | Blitz the remaining ingredients except the cocoa powder until smooth. |
3. | Grab a glass the same diameter as the biscuits and layer the glass. Biscuit first, then cream, then a light sprinkle of cocoa, and repeat. |
4. | Once you get near the top, ensure the top layer is the cream. Sprinkle the top with cocoa powder and allow up to an hour to set in the fridge. |
5. | Take it out the fridge and devour at a sociable time and not right before bed, otherwise you're not sleeping. |
